4 cups water
1 tsp salt
1 tbsp butter
1 1⁄2 cups cornmeal
- Salt the water and bring to a rapid boil.
- Add cornmeal in a steady stream while rapidly stirring.
- Add the butter and continue to stir for 3 - 5 minutes or until polenta begins to pull away from the sides of the pot as you stir.
- Reduce heat to low, cover and cook for 15 - 20 minutes, or until liquid is absorbed and polenta is tender.
