Ras El Hanout spice blend - Testing


1 - So far so good, I think, I don't have many opportunities to use it but it seems to work well.

1 tsp cumin seed
½ tsp coriander seed
½ tsp cardamom seed (from about 10 pods)
¾ tsp freshly ground black pepper?
1 tsp ground ginger
1 tsp salt
½ tsp ground cinnamon
½ tsp cayenne
a good pinch of saffron (optional)
  1. Toast the whole spices (cumin, coriander, cardamom, black pepper?) in a small pan until they are aromatic and have turned a shade or two darker. 
  2. Grind the toasted spices in a mechanical grinder or a mortar and pestle.
  3. In a small bowl whisk together all ingredients until well combined well.
