Poudre Douce - PUBLISHED

Poudre Douce is a spice mix used in Medieval and Renaissance cookery and is a blend, like Italian seasoning etc that varies from cook to cook. This is my start point.

1 - Used in apple desserts to very good effect.

3 tablespoons ginger
2 tablespoons sugar
1 1/2 tablespoons cinnamon
1 teaspoon clove
1 teaspoon nutmeg
  1. Mix together and keep in a jar.
