10 garlic scapes
1/3 cup pine nuts
1/3 cup grated Parmesan
1/2 tsp salt
1/4 tsp black pepper
1/3 cup extra virgin olive oil
Juice from 1 lime
- Put the scapes, pine nuts, Parmesan, salt and pepper in a blender or food processor and process into a paste.
- With the machine running, slowly drizzle in the olive oil first, and then the lime juice. Done!
- Store in a sealed jar in the refrigerator for up to two weeks.
