There are always loads of recipes I'd like to try but lose them before I do. This is where I can record recipes I find interesting and keep notes on my experiments with them.

I have a system that I've adopted for working through recipes:

1 - New recipes are saved to the Experimental Mouffette and is labeled : Untested
2 - As I'm working out the changes I'd like to make (if any) it is labeled : Testing
3 - Once I think I've got the correct formula it is labeled : Test 1
4 - IF I am able to reproduce the effect a second time it is labeled : Test 2 - if I am not able to reproduce the effect, it remains Test 1
5 - The same process as step 4 is used to graduate it to Test 3
6 - Once I have been able to reproduce the effect successfully 3 times, it graduates to my main blog, La Mouffette Gourmande

Untested - Steak au Poivre

4 beef top loin or strip steaks (cut 1 inch thick)
1 tbsp. cracked peppercorns
2 tbsp. butter
1/4 c. chopped shallots
1 lb mushrooms?
2 tbsp. butter
3/4 c. beef broth
1/4 c. brandy or cognac
  1. Sprinkle 1/2 of the peppercorns evenly over each steak, rub over meat and press into meat with the palm of your hand. Turn steaks over and sprinkle remaining peppercorns evenly over each steak and repeat the procedure.
  2. In a 10 1/2 inch or 12 inch skillet melt 2 tablespoons of butter. When the butter is hot, cook steaks about 2 to 6 minutes on each side, depending on desired doneness (LOOK UP TEMPERATURES).
  3. Transfer steaks to an ovenproof dish and keep warm in a 200F oven.
  4. In the same skillet cook shallots in remaining 2 tablespoons of butter until just tender, then add mushrooms, cooking until they 'sweat'.
  5. Increase the heat and add the broth to the skillet and boil rapidly for 1 minutes, stirring constantly to scrape up flavorful browned bits from the bottom of the pan.
  6. Reintroduce the steaks to the pan and turn off the heat.
  7. Carefully heat the brandy or cognac in a ladle over direct heat. Ignite the brandy and carefully pour over the steaks.
  8. Serve when the flame goes out.

Untested - Tarte aux pécans

Recette écrite par Grand-Maman Noël, 1961

une demi tasse pécans
2 c. à soupe beurre fondu
1 et une demi tasse cassonade
1 ou 2 oeufs battus
1 c. à thé vanille

Mélanger le tout (mais pas les pécans) et verser dans un fond de tarte, décorer avec pécans. Faire cuire dans un fourneau à la chaleur ordinaire 425F pour 10 m - réduire à 375F. Cuire 15 à 20 m.

Biscuits à la gelée d'Alice Génier - Untested

Fait de petites sandwichs.

3 cups flour
¾ cups shortening (butter) room temp
2 tsps soda
1 egg
1 tsp. vanilla
1 cup brown sugar (200g)
6 Tbsp (150g) corn syrup (golden syrup or honey?)
  1. Work the butter into the flour until it feels like sand.
  2. Mix in the baking soda.
  3. Whisk together the sugar, syrup, vanilla and the egg until it turns pale.
  4. Divide the dough into 4 portions and roll out to 1/8". Cut into circles ???diameter.
  5. Bake at 350°F for 10 minutes?

Untested - Tarte à la crème glacée

Apparament Maman a fait cette recette quand nous vivions au village.

18 grosses pâtes de guimauve coupées
1 c. à soupe de lait
1 c. à soupe de beurre
2 et une demi tasses de 'rice crisps'
1 pinte de crème glacée (parfum au choix)
confiture de fraises

Beurrer un moule à tarte de 9 pouces. Faire cuire au bain-marie, en remuant constamment, les pâtes de guimauve, le lait et le beurre jusqu'à ce que les pâtes de guimauve soient fondues. Retirer du feu. Ajouter les 'rice crisps' et bien mélanger. Presser ce mélange dans une assiette à tarte. Mettre au réfrigérateur jusqu'à ce que cette 'croûte' soit ferme (environ 1 heure). Remplir de crème-glacée et servir immédiatement ou conserver au congélateur.
Garnir de confiture de fraises.

Untested - Tire de Ste-Catherine

3 tasses de sucre brun
1 tasse de mélasse
1/2 tasse d’eau
3 c. à table de vinaigre
3 c. à table de beurre (pas de substitut)
1/2 c. à thé de bicarbonate de soude
  1. Dans une grande casserole au fond épais, mélanger tous les ingrédients, sauf le bicarbonate de soude;
  2. Placer sur le feu et bien mélanger;
  3. Une fois le mélange homogène, cuire à feu doux SANS BRASSER jusqu’à ce que le thermomètre à bonbon mou indique 253 F, ou 260 F pour le bonbon dur. Cette étape peut prendre jusqu’à 45 minutes;
  4. Retirer du feu, ajouter le bicarbonate de soude et bien brasser;
  5. Verser dans une tôle à biscuits beurrée et faire refroidir dans le réfrigérateur, au congélateur ou dehors;
  6. Une fois la tire refroidie, bien étirer, couper en morceaux et emballer en papillotes avec du papier ciré.
