1 medium head red cabbage, cut into small pieces
2 tart apples, chopped fine
2 Tbsps bacon fat
1 Tbsp lemon juice
1 medium onion, chopped fine
1 Tbsp sugar
salt and pepper
- Heat the bacon fat in a heavy pot and fry the onion until soft.
- Add the red cabbage and cook, stirring occasionally, for 30 minutes (do not add water).
- Add the apples, the lemon juice and the sugar.
- Season with salt and pepper and cook another 30 minutes, again stirring occasionally.
- Adjust seasoning and serve.
